Chef Renzo Garibaldi’s #BestMealEver

“It is difficult to choose just one #BestMealEver; I would like to select ten,” said Chef Renzo Garibaldi, who heads Osso Carnicería & Salumeria, No. 34 on Latin America’s 50 Best Restaurants 2015. “But if I had to choose one it would be Eleven Madison Park,” he added, referring to the New York restaurant focused on a seasonal menu with a European twist that ranked No. 5 on the World’s 50 Best Restaurants 2015.  “It was my first meal in a 3-Michelin star restaurant, and it was just like the things we do, but in a different way,” explained Garibaldi.

At Osso, a small butcher shop that also functions as a restaurant, located in the upscale La Molina suburb, near Lima, Peru, the emphasis is on providing the best cuts of meat, from perfectly cooked ribeye to flavored sausages (cheddar, rocoto pepper marmalade and limo chili). Almost everything is grilled over the barbecue. Standout dishes at Osso include osso carpaccio, deconstructed cutlets and artisanal hamburgers.

When Garibaldi opened Osso in 2013, he placed just one private table at the back of his butchery-meets-restaurant. The secret table proved so popular that it soon attracted international chefs and expanded into the adjacent dining space it occupies today. “If I wasn’t a chef I’d be a butcher,” Garibaldi has said. At Osso Carniceria & Salumeria, Garibaldi strives to show the world that Peruvian food is not just about fish. “In fact, we’ve got everything, and in our case, meat,” Garibaldi has said proudly.

It’s no surprise that Garibaldi’s #BestMealEver at Eleven Madison Park was incidentally, brisket. Garibaldi recalled that he “ate a brisket perfectly cooked, with just the right temperature and texture.” The chef concluded, “I hope to have many more like this, but until today it has been the best.”
